I always found it funny how "children's" cartoons have more nuance in tackling mature and serious themes, but most adult cartoons, which have less restrictions on story-telling, settle for the lowest of low-brow humor and satirizing the same tired tropes.

That's because a majority of kids watch kids' shows. So appealing to their intelligence pans out, a lot of kids are intelligent enough to pick up on the deeper nuance whether they can extract it or not.
This is the opposite for adult cartoons. Most adults don't watch cartoons - for better or worse. They see a show like Bojack Horseman that has the gripping writing and examinations of the human condition and they scoff and go "I'm too good for this." So rather than invest money in writers that don't crack the porcelain from diarrhea, studios just make the lowest brow shit they can make because you can make it as fast as possible. Then once it's done, they still turn a profit because the adult cartoon watchers will still give them enough profit to justify it since they slashed their budgets so much.
To this day, I am still confused about how a show like Power Rangers RPM, a show about 5 guys in spandex(eat your heart out, Doc K) beating up rubber suited monsters, can tell a story that is more mature, more interesting, and, most importantly, funnier, than 90% of these "adult" cartoons.

By the time we were almost finished with the second my partner and I couldn't stop watching. We just finished the 5th and I'm ready for more. All the rest of those are great but invincible looks like straight up garbage at times, the fucking cgi backgrounds look like some shit made by a high schooler using Alice. And i know you said artstyle and not animations but fuck bro the animations were so clearly low budget in some scenes it genuinely made me disappointed. Story and voice acting is 10/10 tho hands down.
Yeah agree, Invincible and Vox Machina’ animation are similar is how average they look at time, and sometimes the animation dipped with low frame rate or straight up just JPG being slide across the scene. It’s a common problem with most shows being outsourced to Korean animation studio, they are cheap and the quality is just “good enough” for them. They never strive to have consistent high quality animation like anime, especially show with gorgeous animation like Violet Evergarden, One Punch Man S1, Mob Psycho and Demon Slayer.

It's classic zach hadel style, the joke lies in it's uncomfortable moments in animation. And that's another thing, smiling friends is (at least to me) funny and entertaining while the other shows mentioned couldn't be fucked to write a single decent joke into their plot.

I would have enjoyed it as a kid to some extent but the humour is dry (especially for a show with a U.S. audience) and you have to know a little about adulthood and Texas to take it all in. I have never been to Texas or USA but I think I understand most of it.
Kids probably see the show through Bobby and find the stereotyped adult characters somewhat familiar and the plot lines somewhat prosaic and unremarkable... not really entertaining. Yes and no. Definitely better than most of the other shows listed in this thread. There's a video of animators reacting to it, and they point out some of the shortcuts the show takes that prevent it from really excelling

Personally I just couldn't get through it in large part due to that. Invincible is so damn bland, and flat. I can kinda see what they're going for looking up the source material, but a LOT got lost in that translation. It clearly doesn't have the animation budget to do the source material justice.
Didn't help that, honestly, the voice acting was not great. I love Walter Goggins, but he is horribly dull as Cecil. I didn't know he of all actors could sound that thoroughly bored, and I dunno how much of that is him simply being a mismatch for the character(he really looks like he should have a gruffer voice) or if he's just not a good voice actor.
If you like the tone of Invincible, you may also quite like Vox Machina. Similar over the top sex, substance use and violence, but set in a medieval/fantasy world. I loved Invincible even as a fan of some of the comics going in to it, and Vox Machina has yet to disappoint!
Edit; in reference to the actual topic at hand, neither of these shows have “disgusting” art styles. They’re a pretty solid Western Animation/Anime design language. They just use that aesthetic to depict disgusting shit.

This one is an outlier to me. It's "gross for the sake of gross" but done right... for the most part. Not quite as good as Metalocalpyse, but still done right compared to things like Paradise PD.
I at least apreciate from Mr. Pickles that when it does something fucked up, it does it aesthetically.
Like, in an interview the creators say they took carefull looks at human anatomy to make the gore more "realistic". Or that when showing Mr. Pickles satanic lair they take inspiration from pagan sacrificial rituals or diabolism arts to make it.

I think the problem stems from the reality that if you want a story to come out correctly, the writer must be involved with the art, and the artist must be able to tell a good story.
When the art team and the writing team get bogged down with debate, the show will suffer. A single clear vision, good or bad, will always be more memorable.
This means that the best shows were those where the main guy could do both, while also not being the best at either.
However as time has moved on and this trend has been recognized, a deviation from the norm was tested in both cases, however, while stronger writing made up for weaker art, the reverse did not hold up, sometimes giving us beautiful animations that had a complete lack of substance. ("Seven Deadly Sins" comes to mind)

It starts with adult swim. Sealab 2021, Space Ghost Coast To Coast (and The Brak Show), Harvey Birdman, Aqua Teen Hinger Force, and a lot of the other earlier shows were green lit with new definitions of shoe string budget. In terms of money they had no money.
They responded to the challenge by finding new ways to be funny. Recycling animation to an absurd degree, refusing to animate pieces or poses, and integrating physical objects to compensate - these were all creative responses to challenges with their medium. Like writing a haiku, greater poetry came out of confinement.
Somewhere along the lines other creators saw the humor and success of those shows and thought that the shitty art was the point and mimicked that instead of being funny.
Family Guy didn’t help because they took the worst parts of that too.

Bojack horseman has actually great designs full of humor, but its implementation and animations looks cheap as hell. The colors are over saturated, the lineart has no variation in it, the animation is rigged and cardboard-y as hell. The god tier writing is what saves it.

They do a good job at having people stand or sit naturally. It's not super funny, but it does end up being a really good drama. Depending on how far you've watched you might not have reached the heel turn. The longer it goes on the more the comedy becomes a background element
