I'm sorry, What!

I need this in my life!

First time trying it, it was amazing! We dipped crackers and apple slices in it and wow! You could almost serve as a dessert or appetizer depending on what you serve it with, it almost tastes like smoked cheesecake

Recipe please?

  • Score Cream Cheese
  • Season with your favorite BBQ rub ( I used Meat Church Holy Voodoo)
  • Smoke 1.5 -2 hours at 225F

Clarification please, can this be done in an oven or do I need specific smoker equipment?

Cause i've got a block of cheese and a block of free time.

Here is a recipe for oven-smoked cream cheese. Haven’t tried, but best of luck!

This is a damn delight.

Just a heads up: that’s essentially baking cream cheese with some spices, not smoking it. You can use wood chips in the oven to get closer to a smoker’s atmosphere

https://justcook.butcherbox.com/no-smoker-heres-how-we-tried-to-smoke-meat-in-the-oven/

Gonna bet my landlord wouldn't be thrilled with me turning the oven into a smoker...

Better to ask forgiveness than permission. Also, bribe them with smoked cream cheese

If it isn't covered in the lease....

I really fancy this but we don't have block cream cheese in UK, just spready Philadelphia. Makes making frosting a bit more tricky.

..so no cheesecake either?!

The stuff we have is firm enough for cheesecake but you couldn't, for instance, pick it up in one piece unwrapped.

Damn I need the answer too please OP

I mean you can do it in the oven but you won't have the same taste and the texture will will be slightly different but I am sure it would still be good just pick a smokey seasoning but not liquid smoke, never use liquid smoke!

What's wrong with liquid smoke? Smoked or blackened anything is full of carcinogens so why would that be any worse?

Its not about health it's about taste

OK fair enough. I haven't used it in years. I used to put it in a hodgepodge dipping sauce and maybe my parents used it a few times in a couple roast/oven brisket recipes when I was a kid

Sorry you got downvoted for asking but thanks for taking that bullet, I was wondering too.

Get a cold smoke chimney

I used a Weber charcoal grill, smoke tube (found on Amazon) and just pumped smoke for a few hours rotating ever 30 minutes and turned out great. Did it on a cool spring day. You do have to let the cheese sit for a few weeks after to mellow the smoke flavor or it will taste bad.

Edit: removed a mod trigger word

I want That saying on a T-shirt

I like to do two for Parties, one with everything bagel seasoning, one with some sort of Meat Church and hot pepper jelly ontop of the MC one.

To clarify: I put on the hot pepper jelly after it comes off the smoker.

You mad genius.

That’s my kind of party

Read that as hot dr. Pepper jelly.

Which reminded me of the Christmas my siblings wanted to try hot Dr Pepper, which was actually pretty good and great for a sore throat.

You just sent me down a rabbit hole to find this Meat Church rub.......and found it at Ace Hardware of all places. Thanks!

Ace hardware actually has a great selection of rubs and bbq sauces.

Also have a great Yeti selection to keep your beers nice and cold while smoking.

What do you have it sitting on, out in the cooker? On a plate/screen/right on the grill? Sounds like an interesting thing to try.

1/4 sheet pan and butcher paper

Disposable aluminum pan and parchment paper it is!

Make 2.... Trust me

For me, sure - but what about the guests?

That’s /u/cli-_-ib , always thinking of others!

So I haven’t tried cheese yet as I am afraid of melting - 225 isn’t too hot? Did you use a tray under it or anything to contain? I do offset smoking but I don’t feel like it’s offset enough for cheese lol

225 is way to hot to smoke cheese though

Thanks - so I guess because cream cheese is heartier? I’m not sure the right word but it’s not the same consistency as regular say cheddar.

Something like that! But yeah a brick of cheddar would turn into a pile of goo at that temp,. If you want to smoke cheese you want to do it 120-140F. You can't even do it on a hot day

[deleted]

This is cream cheese meant to served hot, they were talking about cold smoking cheese for flavor

Yes, the picture was taken in my smoker so on a tray with butcher paper underneath

Do you just toss it on the grate? Or in a special pan so it doesn't liquefy?

Holy Voodoo is one point! My husband has bought all of their seasonings and they are his go to every single time.

I am a sea salt and cracked pepper guy on beef but if I go outside that its always Meat Church and I put it on pretty much everything else

Yeah he keeps it simple with beef, especially his brisket. I like to taste my cow :)

What did it sit on in the smoker?

Sheet pan with butcher paper

Does it keep it's shape like this? Any trick to do that? I feel like I am about to end up with a "expectations vs. realty" meme

Yes, none just follow my steps

Try it with everything bagel seasoning next! It's stupid how good it is

225f doesn’t melt it?

What flavor chips/pettets

Just made it the other night! I swear it's even better the next day.

Yo I just realized we have the same name!

It looks amazing, definitely got to try it.

I need a smoker

Guilty cheese, why can't I ever refuse it!

It’s been all over r/smoking for a couple of weeks now and delicious!

Sounds awesome, I would have expected it to melt at 225. I will try it next time I fire up the smoker.

It gets soft but doesn't melt

I’d smoke some cream cheese.

Did this last weekend and it was crazy delicious. Crackers and ate it like a cheeseball. It was a hit.

Would be awesome with smoked salmon on top

It's a schmiracle!

Does anyone have a good small footprint/cheap smoker for someone who would only likely smoke non-meats and not super frequently? I cant really justify buying a dedicated smoker as I can't eat meat and wouldn't use it super frequently, but I do want to give cheeses/veggies/tofu a shot.

A small weber grill. Look up videos as well for smoking purposes.

Totally a fan of the Webber for smoking. And grilling

Also try googling smoke tubes, one of those may meet your needs.

Pit boss makes some dedicated smokers that are not too expensive 300-500. But for cheaper you can get a master built cabinet style smoker for like 125-250. Not cheap by any means but I figured I’d let you know in case you thought It cost 800.

Weber kettle!

After going through a couple budget propane grills switching to the kettle has been terrific. It has lasted as long as it's predecessors and is so much more flexible. It can get hotter, it can get colder and chucking wood on is super easy

Hell yea. Don’t need a Bluetooth smoker for $800.

Literally anything that can contain a small heat source. Any grill, metal trash cans, bowls, etc.

Smokers are great because when smoking meat it’s very important to keep your temperature in a certain range so the meat cooks properly. But if you’re smoking for flavor and it doesn’t matter if you’re at 150 or 300 degrees, you really just need anything that hold the smoke and your food in the same space.

I saw some people in a park using a cardboard box. No idea what their setup inside was, though.

Weber Kettle and a snake charcoal set up.

Have a Weber Kettle? Use one of these https://www.smokenator.com/

They are the bomb.

I have a theory that you can enhance ANY dish with cream cheese (or butter).

Guilty AF on the butter front

At 225f? Not a cold smoke like for fruits and cheeses? Looks great!

I’ve cold smoked cheese using a smoking tube. Made really good smoked Gouda and cheddar.

Guys is this actually good?

Good, it's better then good it's a f'ing liability

Well that’s all I need to hear. Lol

I wanna eat

I’m coming over and the door better be unlocked or so help me…

Looks and sounds delicious! How did you make it? Recipe pls?

  • Score Cream Cheese
  • Season with your favorite BBQ rub ( I used Meat Church Holy Voodoo)
  • Smoke 1.5 -2 hours at 225F

thanks! we only really get Philadelphia cheese here - feels like it might be too soft - i'll give it a try anyhoo.

That's what I used

šŸ‘ŒšŸ»cheers!

Looks amazing

Hey OP, send me a piece

Looks gouda.

The what now!? That sounds amazing with smoked salmon and a bagel

Now it's a loaf of milk.

At a first glance my mind thought ā€œwow a bunch of seared scallops cut into perfect cubes and neatly arranged, nice!ā€ Then realized it was one large piece and thought ā€œwow that’s a huge scallop, I’ve never seen one so big!ā€ Then I realized how stupid I was and read the title

In my defense, its my first day of a long weekend and its 4:20pm and I am high

I saw your post, and immediately made 3 blocks of it. Hot off the smoker.

So. Goddam. Good.

Hahaha, that's awesome! What did you do to them?

Ate 1/4 of one hot. Put them all in the fridge. Ate another 1/4 cold, and packed another block with homemade tomato jam for my wife’s picnic with her friends.

looks so good, i just wanna eat something like that

Must have been hard to light

Ya that’s sounds awesome, maybe I’ll try one sweet one for a dessert and one maybe spicy rub for app. Can’t wait to try

Looks great. I usually call a dish smoked after burning it.

Instructions unclear and now my bong is clogged.

i dont know what you put this on or how you eat it but it looks fucking amazing

I remember mango with that kind of slice. Mango cheese I'd like to try it suddenly lol

It looks suspiciously similar to roast pork

That looks and sounds beautiful!!

I thought that was crispy pork belly.

Oh sooooooo good.

Looks so tasty omg

Where do I buy?

I Thought It is A Egg Pudding

I don't know what that is but I want to eat it

Oh my

Oh no. My waist didn't need to know this existed...

I’d love to grab a cube.

Oh my. How have I never heard or thought of this. I need to try this immediately.

My cousin smoked cream cheese for our recent family barbecue and it was UNBELIEVABLE. Seriously, I gave myself a stomachache because I couldn't stop eating it. I want to buy a smoker simply for this.

This reminds me of Haloumi cheese. A good one for smoking or BBQ as well.

Awesome. Can't believe this isn't a thing already.

I started seeing it about 2 weeks ago on social

I am wet

come to my house and eat all my family’s ass

gif

This looks absolutely incredible! I have some cheese loving friends coming this weekend, I shall have to try this out!

This would be so good with some smoked crushed almonds or pepper jelly. But not that sickening pepper jelly. Some real good stuff.

That looks amazing!!!! Looks like something that might be good on a cheeseboard too

I never thought of that combination but it sounds amazing

Mmmm fuuuuck yes

That looks awesome! Now it makes me wish I had a smoker to use

Food Porn- caused me to STOP scrolling by…..yummy

Well what do you know, something I did not know I needed in my life.

This look so good, I’m about to cream šŸ˜©ā€¦ā€¦what? 😳

Made this today. Definitely worth making it for a sharable dish.

Dafuk? Daryl is that you?
